Ingredients
1 cup S.R. Flour
2 Tbs caster sugar
2 apples (sweet apples work best)
1 egg
3/4 c milk
Toppings
1 C mixed berries
2 Tbs apple juice
2 bananas
Lime wedges to serve
Method
Mix berries with apple juice to make berry mixture. Set aside to defrost
Mix flour and sugar together, add milk and 1 egg. Whisk vigorously until small bubbles form.
Place frypan on medium heat spray lightly with cooking oil
Grate apples (unpeeled) into batter and pour in required size onto preheated pan.
When small bubbles appear in pancake flip. Cook until golden.
Keep warm in oven until all pancakes are cooked
Serve with fruit toppings as desired.
Hint: add more or less milk depending on your preferred pancake thickness.
