A lot of us have heard of these healthy foods called legumes but aren’t exactly sure what they are.
Legumes are plant foods and include: Soybeans, baked beans, kidney beans, lentils, chickpeas and split peas.
They’re high in protein, fibre, B-group vitamins, calcium, iron, phosphorus, zinc, magnesium, folate and anti-oxidants. Basically, they are really good for us.
But besides their nutritional value, the great thing about legumes is that they’re very cheap, readily available and incredibly versatile.
They can be easily added to your favorite dishes: chickpeas and beans make great additions to casseroles, soups and stir-fry or used as a substitute for meat in bolognases, chili con carne and even nachos.
Perhaps the easiest and most popular way to eat legumes is to have the classic baked beans on toast for breakfast. Look for reduced- salt baked beans and serve on wholegrain bread for extra fibre.
