This quick brekkie fix is ideal when you don’t have time to wash up pots and pans. Just pop it all in a cup, zap it in the microwave and you’ve got a nutritious breakfast in a cup that will see you through to lunch. It’s also a great way to use up leftovers.
Ingredients:
2 x eggs
1 tbsp grated zucchini
1 tbsp corn kernels
1 tbsp grated tasty cheese
1/2 tsp cumin
salt and pepper, to taste
Variations: Use whatever leftover veggies you have in the fridge to make your own version.
Method:
Put the zucchini, corn and cheese into the cup.
Break the eggs in.
Add the cumin, salt and pepper.
Whisk it until it’s all combined.
Put it in the microwave on high for 1 – 2 minutes (depending on your microwave).
