Remove the skin from the rockmelon, honeydew and watermelon and cut in to medium sized cube shaped pieces. Place in a large mixing bowl, add the orange blossom.
Remove the stalks from the basil and mint and cut the leaves in half. Keep some of the leaves aside for garnish.
Add the leaves to the melons, gently mix together and arrange in 4 serving bowls. Garnish with the mint and basil leaves on top.
