This healthy soup in a jar makes eating well at work so easy. Just do a little bit of prep in the morning then add boiling water at lunchtime. Fresh, cheap and delicious.
Ingredients:
2 tsp green curry paste
1 tsp white miso paste
1 tsp fish sauce
150g ramen noodles (or similar)
60ml light coconut milk, frozen
1/3 cup frozen peas
small handful of shredded chicken
3 – 4 shallots, thinly sliced
coriander leaves and lime wedges, to serve
You will need a 750ml – 1 litre size jar. It’s best to use preserving jars as they are heat resistant and won’t crack when you pour boiling water into the jar.
Method:
A little bit of prep goes a long way for this soup to go.
The night before, freeze 60ml of coconut milk in a small container.
In the morning add the ingredients to a clean jar in this order: – Curry paste – Miso paste – Fish sauce – Noodles – Coconut milk (add the block of frozen coconut milk) – Frozen peas – Chicken – Shallots
Put the jar in the fridge at work until lunchtime. The frozen ingredients will help keep things fresh, in transit.
At lunchtime, boil the kettle. Pour enough boiling water into the jar to cover the ingredients, press things down a bit.
Stir well until the frozen ingredients melt.
Add chopped coriander and a generous squeeze of lime juice.
